Chocolate Chip Cookies
The hotel-lobby cookie: oats blitzed to flour, cinnamon in the dry mix, and lemon juice in the cream.

Notes from the card
Grind the oats first
They go into a blender or processor until flour-fine, then join the dry mix. They're structure, not texture — you shouldn't be able to see them.
The lemon juice
Half a teaspoon, and it isn't a flavour. It sharpens everything else. Don't skip it and don't increase it.
